I have genuine Water Kefir Grains also known as Japanese Water Crystals. Like milk kefir grains, these are guaranteed to grow, but they are a totally different animal. They make wonderful coconut water kefir and other soda pop like drinks. They grow like mad so you will have plenty to experiment with and share. Watching them grow is half the fun.

Experiments with Water Kefir Grains
Water kefir grains don't necessarily do equally well in different homes even though the recipe is the same. I did some experimenting in December 2005 to try to figure out what water kefir grains really like. My conclusion is that they grew better on white sugar over other natural sugars and well water as opposed to filtered or RO water. And here I thought all this time I was treating them good by giving them RO water and organic sugar cane. So here is your stragtegy when you get your water kefir grains. Follow the basic recipe, then with your extras do all your experiments with juices or whatever. When you get too many, you can always eat them.I have since switched back to organic cane juice crystals for the sugar and the kefir grains are staying big and beautiful. The water and choice of fruit are the most important details to pay attention to when you are trying to figure out how to tweak your recipe. I have not experimented with other sugars besides cane sugar.
